About This Course

Welcome to the Beverageintelligence Level 3 | Wine Advisor course. This course is designed to expand your wine and service knowledge, to provide you with the skills and confidence to provide the ultimate wine experience for Guests and Customers. Allister Kreft will be your teacher for this course, joined by Joseph Dhafana, who will be your mentor.

Now that you have completed Level 1 | Wine101, and Level 2 | Wine Masterclasses, you have built the foundations of your wine and service knowledge, and brand story telling. It is time to step it up! To achieve that we have brought in one of Africa's most renowned Sommeliers, Joseph Dhafana. He has built a career in wine, from the very early stages of working back of house, into the bar, onto the floor and eventually into the Sommelier position at La Colombe in Cape Town. He is now a successful wine brand owner, and judge at the Eat Out awards, as well as Team Zimbabwe member in the World Wine Tasting Championshop in France. This course is designed to uncover more knowledge and secrets to success in the world of wine and food service. We combine the wine and hospitality training experience of Allister, and the Sommelier experience of Joseph, to bring you the Wine Advisor course.

The outcomes of this course include refreshing your knowledge from Level 1 and 2 in the Beverageintelligence program, driving a deeper understanding of the Art of Suggesting wine, and the top tips of delivering the ultimate Guest experience in a dining environment.

The course is being released in a section by section basis this Term with selected learners, as we gain their feedback and insights, and add modules accordingly.

Course Outline

The Level 3 | Wine Advisor Course has been designed to be user-friendly allowing you, the student, to easily track your progress using the Progress tab while completing the course. In each section you will find captivating videos, in-depth topic notes, as well as a fun and challenging Test Your Knowledge quiz.

The Discussion Forum provides a platform where you can interact with the Course Tutors, as well as fellow students currently completing the course. Scenarios based questions will be asked by your tutor on the Discussion Forum. These discussions are designed to give you the opportunity to master the art of recommending wines. You will be able to discuss the various wine service topics on this forum with fellow students, and share ideas and sales techniques with each other.

Once you've completed all the sections (including the Test Your Knowledge quizzes) of the Course, you will write The Ultimate Test Your Knowledge quiz. The course pass rate is a minimum of 70%. The Test Your Knowledge quizzes (homework assignments) make up 60% of your final mark while The Ultimate Test Your Knowledge quiz makes up the other 40% of your final mark.

So at the end of this course you are going to be informed, empowered, and be able to deliver the ultimate service to your guests.

Allister

Allister is the CEO and founder of Under the Influence and an experienced member of the Beverageintelligence training team, having educated staff in over 300 lodge and hotel properties across the continent. He loves wines from Elgin and the right bank of Bordeaux.
Allister is passionate about building confidence and drinks skills among learners on the African continent.

Joseph Dhafana

In February 2009 Joseph Dhafana and his wife fled Zimbabwe to seek a better life in South Africa. Joseph soon found a job as a gardener at the famous Bar Bar Black sheep restaurant in Riebeek Kasteel, and was quickly promoted to barman, and on his 29th birthday he tasted his first glass of wine, a Pieter Cruythoff Cap Classique. From his first glass of wine, Joseph took a deep dive to the word of wine and service to become a former head sommelier at La Colombe, Joseph is also now a board member of the Black Cellar Club (BLACC) and captain of team Zimbabwe which competed at the world blind wine tasting championships in Burgundy in 2017.Joseph's own wine label "Mosi" focuses on Syrah and Chenin Blanc and pays tribute to his origin and family.

Penny Setti

Penny Setti studied Political Science but a single glass of wine changed the course of her life back in 2000. Originally from Zambia but now based in Cape Town and still boundlessly passionate about the vine, Penny is a sommelier, consultant and used to her own a wine bar. Penny is furthering her education with the Wine and Spirit Education Trust (WSET) Level 4 Diploma, has been a judge on various tasting panels, and is a prominent promoter of women in wine. Penny's favourite white is a delicious old vine Chenin Blanc from South Africa.
